Eiswein wird aus Trauben hergestellt, die bei unter 7 C gefroren geerntet und gepresst werden. Dementsprechend findet die Lese meist erst im November bis Januar statt. Das in den Beeren enthaltene Wasser kristallisiert bei diesen Minusgraden grtenteils aus, nur der in den Trauben enthaltene Zucker bindet nicht kristallisiertes Wasser sowie die enthaltenen Fruchtsuren.
